Easy Sherry Pork Chop Skillet
Dear Reader-
The other day I got a hankerin’ for some fork tender pork chops and I remembered this awesome “The Best Pork Chop” recipe from Gooseberry Patch’s Mom’s Favorite Recipes and so I decided to alter it a bit to accommodate the contents of my fridge and it was yummy!
I took one chopped onion and threw it in a skillet with about 1 T of oil and sauteed them until tender.
Then I threw in 16 oz of sliced mushrooms and cooked them down until they were tender.
Then I threw in 3 cloves of minced garlic via my super duper garlic press (Dude… you got to get one of these!).
Next I threw in a package of 6 boneless pork chops and seasoned them with a little Lawry’s Season Salt and black cracked pepper.
I let them brown for a minute and then I flipped them over.
Then I poured on 1 Cup of Beef Broth
And 1 Cup of the elixir of the kitchen… Sherry.
Now if you have never cooked with Sherry… you don’t even have to go to the alcohol aisle at the grocery store, it is right with all of the vinegars and such…
And it makes things sooo much better than broth alone, so give it a try, you will thank me.
Now put a lid on it and let your pork simmer at a medium low heat for 45 minutes (longer if you have thick chops).
Add about 1 Cup of Carrots
And 4 Red Potatoes Chopped into fourths
Now pour on another 1/2 Cup of Broth
And another 1/2 Cup of Sherry
And put a lid on it again and simmer for another 45 minutes.
What will result?
The most fork tender- flavorful pork chop you will ever have in your life… and it really couldn’t be easier.

Ingredients
- 1 T Oil
- 1 Onion Chopped
- 16 oz Mushrooms
- 3 Cloves Garlic- Minced
- 4-5 Boneless Pork Chops
- Season Salt and Pepper to Taste
- 1 1/2 Cups Beef Broth- Divided
- 1 1/2 Cups Sherry- Divided
- 1 Cup Baby Carrots
- 4 Red Potatoes- Quartered
Instructions
- Sautee onions in oil until tender
- Add in mushrooms and cook down
- Add garlic
- Place pork chops in and season with season salt and pepper
- Brown pork chops on both sides
- Add 1 cup each of broth and sherry
- Put lid on skillet and simmer for 45 minutes
- Add carrots, potatoes and remaining broth and sherry.
- Simmer with lid on for additional 45 minutes

Authenticity Matters
Puddie and I just got back from Type A.
I started to write a list of takeaways and quickly realized that the takeaway below very much needed its own post.
My favorite part of the conference was the We Still Blog keynote and the three very unique but equally as powerful bloggers that held the audience captive with their words, their wit and their authenticity during that very poignant hour or so…
I found myself relating to each of them in very personal ways as they read their words to us.
As Tanis read her post, I remembered the difference she had made in our house over a year ago when that very post pierced my husband’s heart and got him to stop using the R word after years of me pleading with him to stop because his words and specifically THAT word did matter.
I knew the words he had been using did not reflect the supportive wonderful human being I knew him to be… but Tanis– a blogger thousands of miles away– had the right words that changed his heart.
And, during that session, her words were still as powerful as they were that night.

As Cecily read her post, I wanted to stand and shout “AMEN”.
I thought of my weight struggles and how I am finally now on a road to getting healthy, but how fragile that road is as the growing national “concern” over obesity in our weight obsessed culture has done nothing but make me (and most other obese folks) want to eat more …

I really have had enough of the shaming that is going on in this country in regards to food but that my friends is a thought for another post.
Cecily shed a different light on the weight conversation… a much needed light.

As Katherine spoke to us, I so related to her words of social anxiety– as I have dealt with it for years and was dealing with it a bit throughout the conference.
And then, she read her post and I so related to those total moments of being overwhelmed as a mother, and I too had an amazing husband who had a knack for helping me see through the weeds.
I admired the tender way she spoke of her husband and I will carry her husband’s motherhood explanation with me from now on.

All three of these women reminded me of what a force this form of communication can be…
I am sure each person in that room (not to mention all of their readers on the internet) could tell their own story of personal connection to what was shared– yet I am sure all our stories are all very different.
What a beautiful thing.
The authenticity that dripped from each post and each speaker was one of the most profound keynotes I have ever experienced.
But with all that said, what really made an impact on me?
Throughout the conference, on several occasions, I experienced that authenticity firsthand.
They were among the friendliest and warmest people at the conference.
Their focus was not pageviews or prestige– it was people.
They reminded me of everything I love about blogging and the blogging community.
Today– back home in Indiana– I sit here thankful.
Thankful for Tanis, Cecily and Katherine.
They inspired me to be a better blogger…
A better blog community member…
To have more fun…
And, to be the welcoming and authentic person for others that they were so graciously for me.
Mini Murph Mega Fun
Dear Reader-
To say I am over this cast thing would be an understatement.
I. Am. Done.
Which is really silly for me to say because Miss Add hasn’t complained once…
But, as the mama to the little gal with TONS of energy — full of summer-time excitement but somewhat limited to ways to expend that energy… I am done with the cast.
I cannot wait to fill up the pool, turn on the sprinkler and toss a couple water balloons her way in a little over a week…
I also cannot wait for her to come in from a hard day’s play- dog tired…
But right now, there is too much energy and too little to do…
Enter Mr. Papa Murphy into our world today…
Apparently they have new Mini Murph Pizza Kits for the kiddos…
Miss Add could hardly contain her excitement!

Small Tablet, Big Impact
Dear Reader-
The other day I headed out to go pick up a few things after handling a couple of projects in the morning, expecting to be home in an hour to put a couple other work projects to bed that afternoon…
As I rushed out the door, I decided just to take my phone and my wallet… which turned out to be a big mistake.
Ya see as I got to town, I noticed my tire light flashing AGAIN and pulled over to air it up… and there it was… A NAIL… (insert groan here).
The $10 fix was going to cost me a minimum of 3 hours… and I was frustrated.
I was KICKING myself for not grabbing my tablet before leaving… but I thought it would make my bag to heavy and I was just running quick errands anyhow…
Hindsight is 20-20.
I could have worked on my projects or blog posts or… gasp… even read a book while waiting, instead of strolling the aisles at wally world for things I did not need at the time.
I hate wasting time and time I was a wasting…
Ironically, with the pin point precision of a google ad (don’t those things freak you out?!?), I got an email from Verizon on my phone in the middle of all my regret.
They asked me if I would like to start trying out some of their technology for my blog… anything I wanted.
Um, yeah!
So, hey… you got an android tablet that is small enough to tote around like a phone, but big enough to reap the benefits of a tablet so I don’t do this to me again?
And that is when the Galaxy 7.7 entered my little blogger life…
To say I heart this thing is an understatement…
It has all the convenience and customization of my favorite apps and widgets…
In a little package as small as my journal, but big enough that I can get some real work (and play) done on the go…
And it has saved my hiney on more than one occasion… from blog edits to last minute client requests while I am away from my laptop.
And here is the awesome thing… it has a battery life that can totally kick my phone and laptop’s butt… um if they had butts that is…
A typical day for my lovely includes everything from devotions to taking pictures and video to tweaking a blog post to a couple minutes (yeah right) on Instagram, Pinterest, Hootsuite and Facebook.
Oh and email, email and more email… but that isn’t fun, so let’s not talk about that
Then she joins me on El for a book or two…
And then again plays double duty, helping find something to feed the fam while generating more blog content
And, there will no doubt be several times throughout the day where she will be jammin it out on Spotify helping me get everything from work done, to a workout done to a good nights sleep.
So, there you have it… how a small tablet has made a big impact…
And I ain’t just blowing smoke folks…
It proved to be so useful that after I returned the one Verizon gave me to try out, I bought one that day to call my own… and she hasn’t left my side since.
Now, I have to tell you I am a little scared (and I think Puddie is too!) that Verizon is going to keep sending me things to try and share with you guys… because I am not sure my bank account can handle it if I have the same reaction to everything they send me!

BEST MEATLOAF RECIPE-2
INGREDIENTS
- 2 eggs
- 1/4 cup ketchup
- 1/4 cup water
- 1/2 cup minced onion
- 1 Tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 cup soft breadcrumbs (optional)
- 2-3 pounds ground beef
INSTRUCTIONS
Glaze:
Ketchup, brown sugar and a touch of honey.
Mix together to form a thin paste.
Beat eggs in a large bowl. Blend in ketchup, water, minced onion, Worcestershire sauce, and salt. Mix in soft breadcrumbs if desired.
With a fork, mix ground beef with other ingredients. Mold into loaf and place on a rack in roaster or cake pan. Cover with foil and Bake @ 350 degrees for about an hour or until juices run clear and it's no longer pink inside. (May need to drain some of the liquid halfway through cooking time.)
As soon as done, remove the foil and coat the top and sides of loaf with glaze and turn oven to broil. Watch it closely, and broil just until glaze starts to bubble. Remove meatloaf from oven. The best meatloaf recipe is ready..enjoy it !

BEST EVER TURKEY MEATLOAF
A great and best meatloaf recipe to try !
INGREDIENTS
- 1 pkg. ground turkey 97% lean (1 & 1/4 lb.)
- 1/3 cup Italian dressing - restaurant style
- 1/4 cup prepared barbecue sauce
- 1 egg
- 1/2 cup bread crumbs - plain
- 1 teaspoon Worcestershire sauce
In bowl combine all ingredients. Squish with hands until blended. Press into bread loaf pan. Bake in oven at 350°F for approximately 1 hour or until top is nice and brown.
Recipe may be doubled.
Pickle and Cheese variation: Press 2/3 of mixture into pan. Using your fingers or a spoon, form a tunnel in the center. Add shredded sharp cheddar cheese and chopped sweet or dill pickles into the tunnel.
Top with the remaining mixture and bake as directed above. The nice and best meatloaf recipe is ready to serve and this variation is super yummy, we like the sweet pickles best! Enjoy it !

- 2/3 cup milk
- 3 slices bread
- 1/2 cup chopped onion
- 4 oz of shredded cheese
- 1 teaspoon salt
- 1/4 teaspoon of black pepper
- 1 1/2 lean ground beef
- 1/2 cup tomato sauce
- 1/2 cup brown sugar
- 1 teaspoon mustard
Best Meatloaf Recipe Instructions:
Beat eggs. Add milk and bread and let stand until bread absorbs liquid. Stir in onion and cheese. Add ground beef. Mix well. Shape into a loaf. Bake at 350 degrees for 45 minutes. Combine topping and spoon over meatloaf after about 30 minutes. Spoon topping over meatloaf every 10-15 minutes while meatloaf is cooking. The best meatloaf recipe is ready...nice ! Enjoy it !

Ingredients
- 1 lb Ground pork
- 1/2 lb Ground lamb
- 1/2 lb Ground veal
- 2 Carrots (grated)
- 1 Onion (chopped)
- 1/4 c Soda crackers (crushed)
- 1/4 c Oatmeal
- 1/4 c Bread crumbs (or less)
- 1 ts Salt
- 1/2 ts Black pepper
- 1/4 ts Cayenne pepper
- 1/2 c Sour cream
- 1 Egg
- 1/2 ts Dried sage
Step 1:
Preheat the oven to 350 deg. Cook carrot & onion in microwave on high for 3 or 4 min. to soften.
Step 2:
Combine all ingredients in large bowl and mix well. Add only enough bread crumbs so that the loaf holds together well. Form into a loaf & place into an Au gratin or shallow baking pan, large enough to hold it.
Step 3:
Bake loaf for 1 1/2 hrs. or until internal temp. reaches 170 deg. Serve with salsa ketchup or your favorite sauce.
